
Ingredients for 4 people:
- Pasta of choice (500g)
- Pesto of choice
- Cheese (Parmesan/Peccorino etc.)
- Pasta water
- Salt
First Step: Bring a pot of water to a boil. And put your pasta of choice in it. This time we will cook it 2 minutes less than the recommended time of the package because the pasta will finish cooking in the pesto. Also… don´t forget to heavily salt your pasta water!
Second Step: When the pasta is halway done, save a cup of pasta water, that we will later add back to our sauce to make it creamy. Why does pasta water make our sauce more creamy you might wonder? Well since pasta contains gluten, the water absorbs some of it and acts as a thickener.
Third Step: Drain the pasta and add the pesto ( you can, if you want preheat it in a seperate pot), mix it evenly and add the cup of pasta water.
Pesto is always an essential to have since it´s just convenient for times where you are in a rush nut still, as always like to eat well.
